According to estimations by the Food and Agricultural Organization, around 1.3 billion tons of food for human consumption per year is wasted globally, producing a loss of about 550 € billion worldwide. In industrialized countries over 40% of food waste occurs at retail and consumer level producing a huge waste of money and of valuable resources. We propose to develop a Sensory guide which, by giving simple guidelines to evaluate many type of high wasted products on different sensory characteristics, helps the consumer to reduce this wasting. This tool will help the consumer in discriminating either if it is possible or not to consume a product, with regard to the modifications of its sensory properties, avoiding any health risks. In this way we want to push the consumer to a more cautious evaluation, before discarding any food product, not only influenced by the expiring date but also by the product intrinsic characteristic.
