Dr. Charles Feldman, is an Associate Professor in the Health and Nutrition Sciences department at Montclair State University, specializing in food systems. In addition to many years industry experience, Dr. Feldman has many publications, and has given many workshops and international scholarly presentations on topics spanning the culinary field, including: quantity food production, food history, nutrition, food safety, international cuisine, and menu development. Dr. Feldman has published research in Pubic Health, Culinary Technology, Food Anthropology, Foodservice, Food Safety, Food and Culture and Nutrition.

The modern food system, which has multiple, reticulate connections between a diversity of consumers and resources in a global scale, is becoming more sophisticated and such complexity has been beyond the understanding of laypersons. With the prevalence of obesity and the demand of food justice, delivering quality food products to all consumers is a requirement and challenge to the modern food system. I support the Milan Protocol with the hope that the global food industry adheres to a standard of equitable distribution of sustainable and healthy food products.
