Massimo Montanari is considered one of the world major experts on the history of nutrition. He is Academic Director of the Master in History and Culture of Nutrition at the University of Bologna. In the area of his research, it has been particularly appreciate his studies on the history of nutrition as history in general, involving economy, institutions and culture.
